Handicraft
A special category of production, which frequently uses the non-profit structure, is handicraft: the old ways of making 'products' or food. Specially regarding food, very much has been lost in Europa, when strict EU regulations and controls, suddenly made it impossible for individuals, small groups or even whole towns to maintain their local gastronomy, even if it had existed for centuries. As if some bureaucratic regulators locked up in their offices in Brussels could presume to know better than generations of locals working the land itself.
With more and more people turning away from industrial production nowadays, fortunately there is a renewed appreciation for handmade products, food and all related activities. New initiatives to regain old customs are seeing the light each day. A good example is the SlowFood movement initiated in Italy that is gaining international support.
Non-profit Internet
Another great domain for non-profit is internet itself. It is forseeable that in a shorter time than expected by most, many of the existing gratis but anyhow profit-obsessed services will be replaced by some or many non-profit counterparts, maybe even if payed for.
